Black Bean and Goat Cheese Quesadillas

Written by bartender

Prep Time : 10 Min Total Time: 25 min

Serves 4

One quesadilla per person is surely not enough for almost anyone we know so make sure to make plenty to go around. This is a great party food or to make if you are just having cocktails. Black Bean and Goat Cheese Finger Food

  • 1 can (15 onces) black beans, rinsed and drained (1 1/2 cups)
  • 3 oz goad cheese, crumbled (1/2 cup)
  • 1 medium tomato, seeded and coarsely chopped
  • 3/4 cup corn kernels ( from 2 ears of corn)
  • 2 scallions, coarsely chipped
  • 1 tablespoon plus 1 1/2 teaspoons coarsely chopped fresh oregano coarse sale and freshly ground pepper
  • 10 six inch corn tortillas

1. Mash beans in medium bowl until chunky. Add goat cheese, tomato, corn, scallions, and oregano. Season with salt and pepper, and stir until well combined.

2. Heat a grill pan over medium heat. Spread 1/2 cup bean mixture evenly over 1 tortilla, and top with another tortilla. Repeat with remaining bean mixture and tortillas.

3. Raise heat to medium-high. Grill quesadillas, 1 or 2 at a time, until grill marks appear and filling is hot, about 2 min per side. Cut into wedges and serve warm.

Note: Alternative cooking can give the quesadillas a smoky flavor if you cook them on an outdoor grill.

Hayabusa smart car aka Smartuki

Written by bartender

So what happens when you mix a 1300 Suzuki hayabusa motorcycle engine and a smart car? Find out for yourself by watching below.

"They call the finished car the Smartuki. It’s the only one in existence and Z Cars is planning to offer it as an option. Does it run? 0-60 in 4.2 seconds, 1/4 mile in 12.4 seconds and tops out at 132mph. Definitely not your average Smart! Peter says running up to the traffic lights at 13,500rpm is always amusing since other drivers move over when they hear what sounds like a bike coming up fast." *

Now if you thought that was wild watch this next clip where the guy has front breaks and does a indo with a "smart car". These guys have to much time and money on their hands. But how fun would it to drive one for a day. Pull up to a stop light next to a muscle car or an even exotic european car. mmmmm bye bye.
